Alternatively, you can use an oven-safe baking sheet or cast iron skillet and rotate your food throughout the cooking process. Sturdy metal pans, or a simple rimmed sheet pan, are optimal when cooking with a broiler. Rather than always putting down a sheet of aluminum foil on a sturdy broiler pan, you can also use a disposable aluminum foil pan. Broiling pan substitutes are easy. A general rule of thumb is that you leave the oven door open when broiling in an electric oven, but closed to broil in a gas oven.
Baking involves consistent medium heat to brown and cook food evenly, while roasting typically begins with high heat for quick browning, followed by lower heat that finishes cooking the food through. Broiling only uses the top element, so it cooks and browns food quickly, similar to grilling. It could break and that is just a mess you do not want to deal with.
Instead, use a sturdy metal pan that can stand the heat. We had never used the broiler in our oven until we learned this trick. Now that we've learned a few tricks, we love the broiler! We were craving a big juicy steak one night. So, we decided to buy one and figure out how to cook it later.
We tend to do this a lot; some would say it's crazy, others would say it's motivation to learn. After a few minutes of struggling, I did what any young lady in the kitchen would do when she was lost: I called my mama. She said to pull out the broiler pan, season up the steak, and throw it in for a few minutes on each side.
Well, that sounded easy and I was confident I could succeed. Then, I remembered my mother always pulled it from the bottom drawer of the stove. I opened up the drawer fully believing this pan must be there. To my dismay, it was empty. After several minutes of getting lost in my daydreams of ovens being delivered with broiler pans and directions to cook succulent steaks, I realized I still had raw meat on my cutting board and a hungry man in the living room.
As he was stating this fact, he looked down at the raw meat on the counter. Bad news? You're probably going to go hungry tonight. This was some of the juiciest, most succulent steak we ever cooked in the oven. We were quite proud of ourselves. We were still proud and cooked yet another steak the next night. Chicken Tip: I always wondered how people could get chicken to taste moist but still have a crispy crust on the outside.
It's smart to line a baking sheet before putting it under the broiler because high temperatures can really cook on any sort of fat or marinade, making it difficult to clean your baking sheets.
That liner, however, should not be parchment paper. While it is heat resistant, it is not heat-proof, and it can ignite. Also, save your silicone liner for baking cookies. Choose aluminum foil for your broiling needs. And there you have it: a short but important list of broiler faux pas.
And no, my husband did not get in trouble that night of the mistaken broiler pan. He had a delicious dinner ready when I got home. How could I be mad about that?
